Sriracha Bacon Jerky Witchery

Delicious sweet and spicy bacon, dehydrated into jerky! My moch of Trader Joe's Sriracha bacon jerky low carb style.

  • 2 tbsp Sriracha sauce
  • 3-6 drops stevia or low carb sweetener of choice
  • 16 oz nitrate free uncured bacon


  1. Cook in the oven at 250 for 2-3 hours. Several times drain off the grease (save for other recipes) and blot off the bacon with a paper towel. Move the bacon to a dehydrator and expect to dehydrate for 8-14 hours. About 4 hours in brush sriracha sauce sweetened with stevia on one side. Couple hours later flip the bacon and do the same to the other side. Dehydrate until desired doneness.

Recipe Notes

I have tried to do this in just the dehydrator but the amount of fat that comes off it too much for the dehydrator. Easier to drain and retain using a cookie sheet. I place the bacon on cooling grates on top of cookie sheets which makes it even easier to drain fat.
