Sourdough Starter Witchery
Fermenting removes sugar from food! That’s what the cultures eat. I decided I wanted to make a Sourdough Starter that wasn’t fed with the traditional flour. I ordered a gluten free sourdough starter online that wanted to use rice flour to feed it. I tried that but it was still so high carb even if using almond flour as the other bread flour. I was going to use cashew butter freshly ground to feed the starter but after reading the plant paradox i’m not so sure that’s a good idea. I may still try it. For now tho, I have had great success using coconut flour to feed the starter. I’ve made the best french toast and sweet breads. Today I tried using psyllium husk powder and i’m pretty happy with the results.
A coconut flour sourdough starter, golden flax meal and psyllium husk powder make this a great low carb bread.
- 1 cup coconut sourdough starter
- 1/3 cup golden flax meal
- 2 tbls dried egg whites
- 4 tbls psyllium husk powder
- 2 tsp baking powder aluminum free
- 1/2 tsp salt
- 4 whole eggs
- 1/4 cup avocado oil
- 1 tbls raw honey optional
- 1/4 cup boiling water
Mix all ingredients except for boiling water. Add boiling water and mix again. Line a bread pan with parchment paper and add dough mixture. Bake for 30 min at 350. 325 in convection oven.
